Sake from Akishika Shuzo have a cult status in Japan, and rightfully so, this is a brewery of such quality everything they produce is just so stunningly good.
This pure rice sake is unpasteurised and unfiltered, made using the most noble of rice varieties for sake production, Yamada Nishiki which was grown by the brewery themselves.
Kimoto is the traditional method of sake production, producing a sake of richness and depth with exceptional acidity. Having been aged at the brewery this is simply delicious, a savoury nose with layers of texture and that long fine framing acidity showing this to be an exceptional drink with or without food.
And best of all, once opened, will remain in an excellent drinking window for 6-8 weeks stored in the fridge, if you can keep it that long.
