Undoubtedly one of the powerhouses of Chablis, rigorous attention to vines and small yields is paired with winemakers passing their knowledge down to the now 4th generation. All this helps set Vincent Dauvissat wines apart from the rest of the region.
Initially floral and brightly perfumed whilst cooly understated. Gaining nuance and depth as oxygen works its way into the glass. Lemon, apple and grapefruit with a strong flinty minerality. Candied lemon peel is creeping in with years in bottle which only adds to its charm, hinting at quality of one of their cru wines.
This is everything all other Chablis producers aspire too.
