Armed with scientific curiosity and the wisdom and local winemaking nous of his grand father, Francois is making an incredible spread of wines from the Chateau Chalon area. His father worked at the Hospices de Beaune in Burgundy and his grand father tended vines in the Jura, Francois himself has worked in Burgundy and the Rhone before returning to his Jurassic heritage.
Complex and driven this Chardonnay comes off of a tiny plot of limestone. Chalk, white flowers, sea salt and citrus. Great tension and length after a 15 month elevage with the barrels being completely topped up.
