
La Guinelle produces artisinal vinegars in the traditional way of the region of Banyuls, Barrel fermented and finished in demijohn these are beautiful products, highly prized by some of the finest chefs in France and are exceedingly limited.
This is produced from Savagnin in the oxidative style of a famous biodynamic producer in the Jura, Philippe Bornard.
Acetified and aged for five years in oak barrels, it is pale straw yellow, smells of hazelnuts and has a grapefruit and almond flavor just like the original wine: delicately acidic and wonderfully aromatic. Try it with mixed salads, grilled chicken and sautéed scallops. Very limited production.
