The Terada Honke brewery is in the Chiba prefecture and was founded in 1673 making naturally brewed sake using only organic rice, with all the work done by hand for every process. Masaru Terada the talented tojji and current owner, is the 24th generation of this family to run the brewery, taking over from his father in-law to continue this tradition now in its fourth century.
Grown by Masaru, the rice type Kameno-o is actually an heirloom table rice as opposed to variety designated traditionally for brewing. A full and delicious nose with depth, power, a touch of bran and with bright acidity, this is a unique and beautiful rendition of this ancient rice variety.
And best of all, once opened, will remain in an excellent drinking window for 5-6 weeks stored in the fridge, if you can keep it that long.
