Armed with scientific curiosity and the wisdom and local winemaking nous of his grand father, Francois is making an incredible spread of wines from the Chateau Chalon area. His father worked at the Hospices de Beaune in Burgundy and his grand father tended vines in the Jura, Francois himself has worked in Burgundy and the Rhone before returning to his Jurassic heritage.

This is Savagnin that has spent time under veil. Intense orchard fruit, sea spray and peated whiskey interspersed with salted lemons, honey, grilled nuts and comte cheese. This will unfurl over many days to show its self in many great windows of change and nuance.
