Philippe Chatillon's Domaine is relatively new to the Jura wine landscape, but the man himself is well established in the region having been estate manager at the much celebrated Arbois winey of Domaine de La Pinte for close to 18 years.
In 2013, he purchased a small plot of Savagnin in Passenans with which to start, Soon after he added parcels of Melon a Queue Rouge, Pinot Noir, Tousseau and Chardonnay before exchanging his original Savagnin plot for another that has only been worked bio-dynamically.
He works his vineyard by hand, without the use of any chemical fertilisers, whilst in the winery it is all old oak and spontaneous ferments. Furthermore he works in bio-harmony, using sounds and vibrations from harps to aid in the wines balance.
Le Sage Vagnin is a wine that is deep, full and layered. Yellow plum, roasted pineapple, curry leaves and a mineral tension all combine for a highly detailed intense Jurassic white, precise acidity and a spiciness that plays out long and powerful.
These are highly detailed, polished wines from France's smallest region already crowded with a long list of stunning producers, add Philippe's name to that list.
